I've been researching PAT and I was wondering if it is possible to set up a static table where you can input what port is assigned to what IP addresses when the translation occurs?
For example if I wanted 192.168.0.1 to always be assigned UDP port 50011.

Usually that is how it works. You have a particular traffic from an IP address that always need to go to 192.168.0.1 on UPD 50011. NAT can do that for you with port forwarding.
