Need guidance on what shows to focus on to understand how a DHCP server (After setting scopes) allows VLANs (Configured) to hand out address after they are correctly programed on the switch/routers

I'm working a new job starting on Monday as a (Help Desk Technician) but I'm being taught over the next year to take over as the administrator/junior admin. I have a CompTIA A+ Cert/Cisco networking associate degree... I haven't had much learning in Cisco switches since I got out of college (which was 2 1/2 years ago), because I was thrown into a helpdesk technician role after I got out of college and didn't get a lot of hands-on skills. My need is to better understand how the (DHCP scopes are allowed when programming Cisco switches with those scopes and better understanding so I can be confident) along with security. I see ITProTV has Cisco and security+ classes/videos but wanted to ask if you all have specific areas I can look at before I start my job in a few days to help prepare me ahead of time while continuing learning after work.
Also, I have been using packet tracer to build network topologies but still confused about some areas (DHCP) (Cisco Router/WLC) and (VoIP)

Also Josh - I just reread your SUBJECT field and realized you actually asked a question there. If you have a DHCP server setup with multiple scopes - the DHCP server examines the IP address of the receiving interface to determine which scope to use to accommodate the client.
If the client is not directly connected to the DHCP server and a DHCP Relay Agent is sending in the request, the DHCP Relay Agent relies on the Gateway IP Address (GIADDR) field to communicate with DHCP servers. The GIADDR is used to inform the DHCP server about the subnet upon which the DHCP client that is requesting the IP address lease resides. This address is also used to inform the DHCP server of the IP address to use to communicate with the relay agent.
