macOS Boot Process

In the macOS Boot Process lesson of the Apple Certified Support Professional macOS 11, Don mentions starting at 3 minutes 20 seconds of the video that there is a booter in the form of an boot.efi file that resides in the mbr of the hard drive. However, I instead see the GUID partition scheme being used for the EFI partition, where the video talks about the booter (boot.efi) residing at 8:28 of the video. Do mac formatted hard drives use mbr partitions?

I could be wrong but I believe this is setup for those that would have to run bootcamp with a WindowsOS. I'm not sure if this is still true.
I believe you could disable SIP in recovery mode, then run
sudo gpt --vv -r show /dev/disk0
to see it...but I've only got my laptop running Ventura and cannot tell you if things are different now.
