Starting Intune

Hello,
I just started at a new company, it's small, around 200 users. They just switched to Azure and Microsoft 365 about a year ago, and I'm tasked with getting Intune set up. I'm working through the Mastering Microsoft Endpoint Manager and Intune video series.
I'm also looking for another good resource or example for getting started. I think all of these will have to be self-enrolled since most workers are remote. Do I get the devices enrolled first? Do I create the policies first? Best ways to test? Best ways to deploy with minimal user intervention or interruption?
Any help is appreciated. I understand Intune is complex but a very very powerful tool and I want to learn the most I can! Thanks!
