Under the "Deployment with NetInstall" section, Don mentions holding Command+N to boot from the network. Is this the same as Windows PXE Boot?

Yes, this is the Network boot command which would be a PXE boot if your mac supports network startup volumes. This may be "N" on startup...not sure about 10.11 server.
