Need help understanding eDiscovery and holds

I am trying to wrap my head around what exactly I would use eDiscovery for with a hold vs just using a content search, I've watched some videos but they're a bit dated and I am not fully grasping the concept.

Organizations have to keep track of so many things related to so many things that may be called into question by someone. That someone could be HR looking for specific email written by a person that occurred during a specific week. It could be legal matter, where they need ever piece of data that mentioned this product, with this person's name that occurred during these dates. It could also insure that data in both of those situations don't get destroyed but retained for longer if needed.
So majority of companies may use it to manage data in any case that might be called into a possible legal situation. This at one time just referred to email but we can now involve well any data--including chats and chat history etc.
