is there a course on microsoft servers that doesn't use PowerShell in the labs or also shows the GUI version? the 2019 is all powershell

Sadly, no. Most of our Microsoft Server courses are tied to helping people prepare for the certifcation exam.
Microsoft has decided to push powershell.

as im working through the labs, im just finding inconsistencies with the format. ex, the windows server 2019 course lecture on DNS shows the methods via GUI but the lab is half PS and half GUI. Why not keep everything the same and show both methods in lectures and labs?if microsoft is pushing powershell then please make the whole lab and lectures powershell.

So, sometimes this works out exactly as you say. Where labs and lecture line up. We are trying to do better under one company umbrella.
Sometimes, the development of the labs by one team do not get done at the same or the even the same subject matter as who delivered the lecture. The reason for this one because the lab development happen when Practice-Labs were separate company from ITProTV. 2 distinct companies. Today, they are united under the parent company of ACI Learning. So moving forward, our hope and goal is to get these better aligned.
Having said that, these labs especially the older ones may not align that are mapped to our courses because of other business issues. For example, if that it was licensed and provision as it stands now.
Another point you may discover, especially from Microsoft exams, they update their exams and objectives much more frequently than any other vendor in the certification business, which means we cannot iterate as quickly as we only have a limited amount of resources at a given time.
But our goal is to do what you have said.
