Advice on getting up to speed on Azure

Need to stand up 2 or 3 devices in a stand alone secure enclave environment. Plan is to just use Azure to handle all the things that my on prem AD does. We have an O365 tennent mainly for office licensing compliance, but do have some Enterprise apps and SAML but that is about as in depth as we have gotten with Azure. I am looking for recommendations on what IPTV courses to focus on to get up to speed quickly. Been in IT for 28 years so not some total newbie, just haven't had a need to dive into Azure yet.
Think I need to knowledge up on Azure, Intunes (geared towards Windows device management), Identity, maybe Defender/security. Long term plan is to go through most of the course to become competent in Azure and those areas, but for now I am hoping to do a quick boot camp to get the project moving. Any suggestions on what classes would be the best use of time? -
Check out the Microsoft category of our video courses and you will discover a ton of Azure courses. The classically recommended starting point is Microsoft Azure Fundamentals (AZ-900). After that course, many head directly into Microsoft Azure Administrator (AZ-104), but notice that you could start to specialize pretty quickly with other courses and modules we offer. For example, if security becomes your focus, Microsoft Azure Security Technologies (AZ-500) would be on your short list.

If you are potentially looking at setting up a hybrid infrastructure the AZ800/801 would be something to look into as well.
